The white wine for the Holy Mass was born in the Pellegrino cellars of Marsala in Sicily, which is the official supplier of the Vatican. Pellegrino enjoys a special authorization from the Bishopric of Mazara del Vallo which allows it to market this type of wine under the Pellegrino brand. This permit is renewed year after year, since the early twentieth century. But what kind of wine should the parish priest use during the celebration of Holy Mass? Even if the wine becomes the blood of Christ, it can also be a white wine. Indeed Pellegrino uses Catarratto and Insolia (which we also know with the name Ansonica). The processing is that of liqueur wines because they are better preserved. For the production of wine destined for the Eucharist, Canon Law provides for a strict regulation dictated by the Episcopal Curia itself. And to obtain the annual renewal of the authorization, Pellegrino must have a line dedicated to the production of this wine. Stainless steel wine tanks reserved exclusively for wine to be used for Holy Mass celebrations. The number and quantity are indicated, so the Curia can take note of the load and its discharge.
