On Etna the maturation of our Chardonnay, from which we produce Guardiola, dragged on until the end of September due to the height of our vineyards (1000m asl) and the violent temperature range between night and day. As soon as they were fermented, the white wines were green, but after having been on yeasts for long months, immediately after spring 014, they began to have a greater structure, becoming a more fat and complex wine. Taking care of it in the cellar, it gradually developed a real length and depth. The aging in the Guardiola 2013 bottle will add luxuriance to its almost pungent minerality. This is an aging wine.
