A Mano Libera was born in Pantelleria where, every terrace bordered by dry stone walls and cultivated with zibibbo, man has always tried to make the most of the cultivable space. In this regard, close to the walls, associated with caper plants, a small pergola of white or red grapes was planted to make wine for itself. These pergolas were made up of varieties of autochthonous grapes of Sicily such as cataract, insolia, Grecanico, grillo, damaschino. The peasants were very jealous of this production which, associated with the second fruit of the Zibibbo, around the fourth decade of September (racemes), went to make a particular wine.
