The White Cru of the founders Colomba Bianca is a wine of the highest quality, ambassador of our brand in the world. It has a straw yellow color with greenish reflections. The bouquet is rich and elegant with hints of tropical fruit and nuances of apricot, melon and citrus fruits. On the palate it is pleasant, full and enveloping with an excellent acidic balance and an intriguing aromatic persistence. The vine is 60% Grillo, 20% Catarratto and 20% Zibibbo. The grapes, gently picked in small crates, are pressed and macerated at low temperature for a few hours before soft pressing. The must is fermented at a temperature of 15 ° C for 20 days. The wine is then aged on the fermentation lees for six months and then rests for six months in the bottle before coming out on the market.
