Caeles Grillo is a wine made exclusively from Grillo grapes grown on the estate of Borgo Guarini, in the Trapani area. Certified organic and vegan born in a very particular cru characterized by a tendentially silty soil that gives a feeling of greasiness between the fingers. The Caeles Grillo , interpreting the multifaceted terroir of Borgo Guarini, presents itself as a white with a marked sapidity with an intense straw yellow color and with an acidic shoulder that gives immediate elegance. The bouquet is complex and strong personality thanks to the aromatic contribution of the thioli, aromatic precursors of this grape and responsible for those fresh and exotic fragrances, such as pink grapefruit and passion fruit, which are immediately perceived in the glass together with nuances of Mediterranean scrub. A net wine, vertical, able to overcome any consumer bias on possible defects of organic wines.

La Cantina Firriato ha inizio nei primi anni anni 80. La passione enologica di Salvatore Di Gaetano viene attratta da un luogo particolare, la contrada del Firriato, nell’agro straordinario della città di Trapani, un territorio agricolo segnato profondamente dalla coltivazione della vite e dalla cultura del vino, posto tra il mare, bellissimo, della costa trapanese e la rocca, maestosa, dell’antica città di Erice. Sono gli esordi di un giovane imprenditore, innamorato della sua terra e che a questa terra guarda con occhi nuovi, intravedendo le potenzialità di crescita e di sviluppo di un territorio viticolo d’eccellenza come è quello delle valli trapanesi, ancora però non espresse con il necessario impegno e il giusto approccio produttivo. Si parte dal vigneto, dai primi impianti di Nero d’Avola, Catarratto e Ansonica, condotti con lo scrupolo di una viticoltura moderna centrata su un concetto nuovo di qualità del vino che ha il suo primato proprio nel vigneto e nella sua gestione agronomica.
