Capofaro Malvasia di Salina has born from the love of Tasca d’Almerita family for sea
and vines. Shadow withering allow a correct sugar concentration and keep the aromatic
component of the grapes as well as their freshness. Malvasia Capofaro is an elegant wine,
never mawkish, perfect expression of the sea and the soil it takes its origins from.

Drying method: On mats. Dry grapes yield per Ha: 2 t. Fermentation: In stainless steel tank at 16°C controlled temperature. Length of fermentation: 30 days. Malolactic fermentation: Not developed. Aging: 6 months in stainless steel tanks. Alcohol content: 11.5% Vol. Wine analitycal data: AT 6.80 g/l - pH 3.70 - Sugar Residual 158 g/l. Organoleptic Details Colour: Yellow with good intensity and golden reflex. Bouquet: Good aromatic intensity, raisins, candied fruits, lilies with a hint of black pepper and lemongrass. Taste: Well balanced range between sweetness and acidity, pleasantly fresh, savoury character given by the volcanic soil.
