Soil type: medium consistency, results from sub Appennine sands of Pliocene origin and nature of calcareous and siliceous inframezzato by clay layers of fresh, compact and calcareous tuffs. Harvest period: end of September to October. Material containers fermentation: Giare (amphorae) of mud from 400 to 250 liters. Fermentation temperature: free to proceed, not exceeding 30 °.
